Cream of tartar is a natural leavening agent, also called tartaric acid, which has natural leavening properties. It is suitable for vegetarians and vegans.
Since cream of tartar is natural, its leavening action is also natural, and it is no coincidence that in American and English recipes you will never find instructions to use the classic “baking powder” but to use cream of tartar and baking soda: the reason is that cream of tartar gives extreme softness to baked goods and makes them “rise” without weighing them down.
Its use in cooking is simple: just replace the amount of leavening agent called for in a recipe with half cream of tartar and half baking soda. It replaces yeast both for making pizza and generally for leavened sweets.
