The “king of peppers”: large peppercorns, complex aroma and pronounced heat

Tellicherry Garbled Special Extra Bold black pepper is a premium selection from the Thalassery region in southern India. Renowned for its superior quality, this pepper is obtained from ripe berries harvested by hand and carefully sun-dried, giving the peppercorns an intense dark colour and a complex aroma. The “Garbled Special Extra Bold” classification indicates larger peppercorns, selected to offer a unique sensory experience.

characteristics and properties: This pepper stands out for its generous-sized peppercorns, which contain a high level of piperine, responsible for its pronounced, persistent heat. The aroma is rich and layered, with notes ranging from fruity to herbaceous, along with citrusy and resinous nuances.

how to use: To fully appreciate this pepper’s aromatic qualities, we recommend grinding the peppercorns just before use. It is ideal for seasoning a wide range of dishes, from red and white meats to fish, vegetables and legumes. Its versatility also makes it suitable for enriching sauces, soups and marinades. For an optimal tasting experience, add the pepper at the end of cooking or directly to the finished dish.

in the kitchen: In culinary applications, Tellicherry Garbled Special Extra Bold black pepper is considered the “king of peppers” for its ability to elevate the aromatic profile of any dish. Perfect for dishes such as grilled steaks, risottos, pasta with fresh tomato sauce and roasts, it adds depth and character without overpowering the other ingredients.
