Our Extra Virgin Olive Oil comes from a small mill in Calabria, with which we have been working for 25 years. The company has implemented an internal control system to monitor every stage of processing.

Our oil

The olives used to produce Girolomoni oil are mainly of the Carolea variety (predominantly because it produces a sweeter, more balanced taste), Grossa di Cassano, Tondino and Dolce di Rossano. Leaf removal and washing are carried out using state-of-the-art machines which, thanks to special currents of air, are able to keep the olives intact throughout the various stages.

The olives, cleaned so thoroughly that they are free of residues, are then crushed and placed in special steel tanks. The resulting olive paste is subsequently cold-extracted and separated into three parts: water, olive pomace and the excellent extra virgin olive oil, which we offer in 75 cl bottles.
